Defrost the codfish<\/a> stew. Peel and wash the onion and garlic cloves and chop them finely.<\/p>\n\n\n\n Heat the olive oil in a pan, add the onion, the garlic and the bay leaf and let it braise until soft. Then add the tomato, stir, and let it braise for another 5 minutes.<\/p>\n\n\n\n Add 1.2 L of water and the vegetable stock and bring to the boil. Then add the rice and the codfish and cook for 20 minutes, stirring occasionally.
